our approach
Harvesting
We choose to hand harvest as often as possible to keep decisions in the vineyard, where quality is first shaped. Careful picking allows for selection at the right moment and ensures the fruit is handled gently, arriving at the winery intact and expressive. This approach protects natural acidity, texture, and balance before any winemaking begins.
When conditions or scale require it, we also machine harvest — often at night when temperatures are low and the fruit is naturally cooler. Night picking preserves freshness, reduces oxidation, and allows us to bring fruit to the winery in optimal condition.
Whenever possible, we source fruit from Sustainable Winegrowing Australia (SWA) certified vineyards, working with growers who share our belief in thoughtful farming, long-term stewardship, and respect for site and season. Whether by hand or machine, the aim is always the same: to protect purity, precision, and the integrity of the season.
Élevage in Barriques
In the cellar, we favour barriques over larger vessels such as puncheons or foudres, not to impart oak character, but to gain precision. Smaller barrels allow for closer attention during élevage, subtle oxygen exchange, and finer control over texture and integration. Their scale enables parcel-by-parcel decisions, encouraging harmony between fruit, tannin, and acidity as the wine settles into balance.
Oak is used as seasoning rather than signature — a quiet structural element that refines texture and supports longevity, while allowing site and variety to remain clearly articulated.

Our fruit is sourced from selected sites in Heathcote, a region defined by its ancient Cambrian soils and quiet intensity. Rich in ironstone and naturally free draining, these soils encourage deep root systems and low vigour, resulting in fruit with concentration, structure and clarity.
Heathcote’s warm days allow varieties to reach full flavour maturity, while cool evenings preserve balance and composure. This daily shift brings depth without excess, ripeness without loss of line. It is a region that produces fruit of substance — structured, grounded and naturally expressive of place.
For us, Heathcote provides a foundation of depth and discipline across varieties. Whether white or red, the fruit carries weight, definition and a savoury edge that speaks clearly of its origin.

Great Dane Wines produces small-parcel wines shaped by restraint, season, and intent. Each release is made once, in limited quantity, and never repeated.
Our Cellar List offers a considered way to stay connected to what we make and when we make it. It is designed to feel personal rather than promotional — a quiet link between the cellar and those who value thoughtful, site-driven wines.
Production rarely exceeds 1,000–1,300 bottles per wine each vintage.
Members receive priority access to limited and new releases before they are offered publicly, along with early allocations, occasional cellar updates, and notes from the vintage as it unfolds.
There are no obligations or scheduled shipments — simply the opportunity to secure each wine while it remains available.
